For the Dreissigacker single site wines, we rely on small-scale vinification. For us, this means that individual harvest steps, i.e. harvested grapes, are vinified separately and independently. This gives the grapes the opportunity to develop their individual characteristics and nuances. For this purpose, we divide a vineyard into several harvest steps for our single-vineyard wines. With the small-scale, very individual production in smaller quantities, we increase our craftsmanship. Since we put a lot of effort into the sustainable cultivation of our vines, the small-scale, artisanal vinification is the logical consequence of the preceding efforts in cultivation. In this way, we manage to evoke individual aromas and bring out unique nuances of taste in the Dreissigacker wines, especially in the single site wines.

The Dreissigacker single site wine fermentation cellar is our real treasury. We ferment the single-vineyard wines separately in the small stainless steel tanks. Maturing in wooden barrels brings roundness to the wines - the stainless steel tanks ensure precision and complexity in the Dreissigacker site wines. The elaborate, artisanal ageing of the site wines in the relatively small tanks illustrates our philosophy of bringing out the best taste and characteristics from all the grapes. In the end, the only thing that counts with Dreissigacker site wines is the taste - and that is unique.

Aging potential

After the vinification process, Dreissigacker wines are allowed to rest. There is no general answer to the question of how long the single site wines are stored with us before they are released to customers. We simply give the wines the time they need. The storage is checked regularly, and only when the wine has developed its full potential, we release them. All wines that are released by us are completely rested, which means they are ready to be enjoyed. However, the high-quality, artisanal ageing of our wines also makes them storable for a very long time.

Those who like to stock up their wine cellar with storable wines should pay attention to the following: The storage location should be cool, dark and dry. A constant temperature between 10 and 15 °C is important. For bottles with a cork, you can store the bottles lying down so that the cork remains moist.
