Baked Potato with Salmon & Wunderwerk Riesling

Baked Potato with Salmon and Herbs Recipe


This dish thrives on balance. The potato forms the base. Crème fraîche adds creaminess, capers and pickles provide salty and fresh accents. The salmon complements with texture. Herbs and lemon bring everything together.

Ingredients for Baked Potato with Salmon

4 people

 


4 large starchy potatoes | baking potatoes 
500 g salmon fillet 
6–8 tsp capers 
400 g crème fraîche | alternatively quark or sour cream
2 tbsp Dijon mustard 
160 g gherkins 
1 tbsp fresh dill 
1 tbsp fresh parsley 
1 clove garlic 
2 tbsp lemon juice 
Olive oil 
Salt and black pepper

 

 

How to Make Baked Potato with Salmon

Step 1 

Preheat oven to 230 °C. Rub potatoes with olive oil, salt, and pepper, pierce several times, wrap in aluminum foil, and bake for about 1 hour 15 minutes. For the last 15 minutes, remove the foil to make the skin crispy.

Step 2 

 

Season the salmon with a little salt and add it to the oven about 8 minutes before the end of the cooking time, until it is still juicy inside.

Step 3 

Mix crème fraîche with gherkins, herbs, Dijon mustard, lemon juice, and garlic. Season with salt and pepper.

Step 4 

Quarter the potatoes and press lightly to open the interior. Fill with crème fraîche, salmon, and capers. Garnish with dill.
