Vigorous Vines

CONCENTRATION AND FINESSE

The grapes for the Einzigacker come from the two prominent single vineyards Bechtheimer Geyersberg and Bechtheimer Stein, whose vines are at least 50 years old.
The Geyersberg single vineyard, a south-facing slope with weathered limestone and loess in the topsoil, produces a special concentration and complexity due to the abundant warmth. In contrast, the cooler north-facing slope of the Bechtheimer Stein lends the wine a delicate freshness. The slow ripening of the grapes here develops the unmistakable finesse and elegance of the Einzigacker. The Pinot Blanc grape variety requires careful cultivation to achieve excellent results. The foundation for this is laid by the biodynamic cultivation that the Dreissigacker winery consistently pursues. For the Dreissigacker Einzigacker, the grapes are halved in early summer. This maximum yield reduction allows the grapes to ripen particularly beautifully without losing freshness. Another important approach in the cultivation of Pinot Blanc is the optimal management of the canopy. The leaves are only partially removed, so that the canopy is well ventilated, but the grapes are sufficiently protected from excessive sunlight and rain.

PRECISION AND EXPRESSION

After selective hand-picking, the grapes are gently transported to the winery in small, uniform containers. Once there, they are cooled overnight before being traditionally trodden by foot the next day. The berries then remain in their own juice for several hours before being gently pressed. At every step, the Dreissigacker winery places particular emphasis on artisanal precision and careful handling of the grapes – the basis for the outstanding quality of Dreissigacker wines.
After sedimentation, the must is transferred to 500-liter oak barrels, where it undergoes spontaneous fermentation. The wine then matures on its lees for at least 1.5 years. This maturation period and the special oak barrel characterize the Einzigacker Pinot Blanc with its unique traits. Its spicy roasted aromas and powerful structure give it a distinctive personality. At the same time, thanks to the fresh grapes, it retains elegance and finesse, as well as a delicate structure. This extraordinary combination gives the Einzigacker Pinot Blanc its unmistakable, unique character and enormous aging potential, which rounds off this exclusive wine experience.
