The fragmented expansion

For the Dreissigacker single-vineyard wines, we rely on a small-scale winemaking approach. For us, this means developing individual harvesting steps, i.e., harvested grapes, separately and independently. This allows the grapes to develop their individual characteristics and nuances. To achieve this, we divide a vineyard into several harvesting steps for our single-vineyard wines. With this small-scale, very individual production in smaller quantities, we increase our artisanal effort. Since we put a lot of commitment into the sustainable cultivation of our grapevines, the small-scale, artisanal development is the logical consequence of the previous efforts in cultivation. In this way, we bring out individual aromas and highlight unique taste nuances in our Dreissigacker wines, especially in the single-vineyard wines.

The Dreissigacker single-vineyard fermentation cellar is our treasure chamber. In the small stainless steel tanks, we age the single-vineyard wines separately. Aging in wooden barrels gives the wines a special harmony – the stainless steel tanks ensure precision and complexity in the Dreissigacker single-vineyard wines. The elaborate, artisanal aging of the single-vineyard wines in relatively small tanks illustrates our philosophy of crafting the best from all grapes. In the end, only the taste matters for Dreissigacker single-vineyard wines – and it is unique.

After development, the Dreissigacker wines are allowed to rest. How long the single vineyard wines are stored with us before they are sold cannot be answered across the board. Because: We give the wines the time they need. The storage is regularly checked, and only when the wine has fully developed its potential do we pass it on to our customers. All wines from our cellars are rested, meaning they are ready for enjoyment. The high-quality, handcrafted development of our wines also makes them very age-worthy.

If you like to stock your wine cellar with age-worthy wines, you should consider the following: The storage location should be cool, dark, and dry. A constant temperature between 10 and 15 °C is important. For bottles with a cork, the bottle can be stored lying down so that the cork remains moist.
