Its complexity easily handles the strong spices of the wontons and counters them with its delicate acidity. The Riesling doesn't just accompany the dumplings – a splash of it also goes into the filling. And since the bottle is already open, you might as well enjoy the first glass while cooking...

IN THE MAKING

INGREDIENTS

For the dough
300 g wheat flour | 160 ml hot water | 1/2 tsp salt 

For the filling
1 bunch spring onions | 200g mixed minced meat | 1 tbsp soy sauce | 1 tbsp aged Riesling | 1 tbsp chili sauce | 1 tbsp chopped coriander | 2 pieces ginger | chili | salt | pepper | olive oil

 

How to

PREPARATION

For the dough, mix flour and salt in a bowl. Add the hot water and stir. Knead the mixture and form into a ball. Then wrap in cling film and place in the refrigerator for about 30 minutes. Chop spring onions, ginger, chili and coriander finely and mix with the minced meat. Add Riesling, soy sauce and chili sauce and season with salt and pepper. Mix everything well. Roll out the dough thinly and cut into squares. Place a tablespoon of the filling on each dough sheet and fold them. Fry in oil or steam. Alternatively, the wontons can also be cooked in beef or vegetable broth. Serve with a little chili sauce.
