Picked selectively by hand: the grapes for the Dreissigacker Pinot Gris
The grapes for the Dreissigacker Pinot Gris come from biodynamically farmed vineyards in the Bechtheim sites Heilig Kreuz, Stein, Rosengarten, Hasensprung and Geyersberg. Careful selection in the vineyard means only fruit of the highest quality reaches the cellar. Picking is done by hand without exception, to preserve the quality of the fruit. Immediately after the hand harvest the berries are brought to the winery in small crates and trodden gently by foot, so that the juice can macerate with the skins over several hours before a gentle pressing.

The Dreissigacker Pinot Gris, gently aged
The Dreissigacker Pinot Gris was fermented spontaneously and aged 60 per cent in stainless steel and 40 per cent in tonneau and large cask. The wine first rested for five months on the full lees, then on the fine lees until bottling. Stainless steel gives the wine its fruity, balanced acid structure; the wood adds volume and a fine roundness. The result is a harmonious, expressive wine.
