Picked selectively by hand: the grapes for the Dreissigacker Riesling
The grapes for the Dreissigacker Riesling come from biodynamically farmed vineyards around Bechtheim and Westhofen. Consistent selection in the vineyard means only fruit of the highest quality reaches the cellar. Picking is done by hand without exception, to preserve the quality of the fruit. Immediately after the hand harvest the grapes are brought to the winery in small crates and trodden by foot, so that the juice can macerate with the skins before being pressed gently over several hours.

Aged without artifice: a Dreissigacker Riesling full of structure and depth
Ageing the Dreissigacker Riesling follows one clear principle: as gently as possible. After natural sedimentation the juice is therefore moved to the cellar by gravity alone. Fermentation is spontaneous, partly with whole berries, which adds further depth. The wine is aged 90 per cent in stainless steel and 10 per cent in large oak casks, where it matured for six months on the full lees and spent further time on the fine lees until bottling. This careful approach gives the wine a harmonious balance of freshness, spice and fine minerality, with an impressive ageing potential. The Dreissigacker Riesling 2023 is clear and precise. It goes as well with light summer dishes as with fine cooking, and is particularly harmonious with salmon tartare and green asparagus or a creamy mushroom risotto.
