A Hasensprung Riesling crafted with time and finesse

The single vineyard site Hasensprung is primarily characterized by heavy clay soils. The over 40-year-old vines can root deeply due to light sand deposits and are well supplied with water and nutrients even in dry and warm months, such as the summer of 2019. The Riesling grapes from Hasensprung ripen as slowly as in hardly any other site, thus producing voluminous yet delicate wines. The perfectly healthy berries were harvested comparatively late and selectively by hand. Upon arrival at the Dreissigacker winery, they were gently trodden with feet. After a long maceration period, they were carefully pressed and spontaneously fermented. We aged the 2019 Hasensprung Riesling 70% in double-barrel casks and 30% in stainless steel. The stainless steel highlights the clear Riesling style. Just like aging in wood, the long aging on the full lees provides the wine with special depth and complexity. Like all Dreissigacker single vineyards, the Hasensprung Riesling was meticulously developed with plenty of time, finesse, and intuition.
