Yield reduction for even more expression: Bechtheim Chardonnay village wine
The grapes for the Dreissigacker Bechtheim Chardonnay come from the biodynamically cultivated Bechtheim Stein vineyard. To improve quality, the grapes are halved in early summer, so that the vine's energy concentrates on a smaller yield. Harvesting is consistently done by hand. The grapes are then carefully placed into small individual containers, transferred into larger boxes at the winery, and gently pressed with the feet. This allows the juice to macerate with the skins for several hours before a gentle pressing takes place in several stages.

The Bechtheim Chardonnay Village Wine – long-aged for perfect harmony
Just as much care is taken in the cellar as in the vineyard. Gentle processing of the grapes is paramount. The grapes are transported exclusively by gravity, meaning by fall pressure – pumps are deliberately avoided to prevent stressing the wine. The Bechtheim Chardonnay is pre-clarified by short sedimentation – optimal conditions for natural yeasts and subsequent spontaneous fermentation. The wine is aged 100% in wood – in new and twice-used 500-liter tonneaux barrels. The wine rests for 1.5 years on its full lees and then for two months on its fine lees. This long maturation period develops an exceptional balance between power, structure, and elegance, while the typical Chardonnay aromas remain clearly recognizable. With its spicy notes, full-bodied yet harmonious, the Bechtheim Chardonnay 2022 pairs excellently with a Red Thai Noodle Soup. The wine's delicate creaminess perfectly combines with the dish's slight spiciness and aromatics.
