Gentle ageing
The grapes for Einzigacker come from two striking single vineyards, Bechtheimer Geyersberg and Bechtheimer Stein, where the vines are at least 50 years old.\r\nThe Geyersberg site, a south-facing slope with weathered limestone and loess in the topsoil, brings warmth and with it particular concentration and complexity. The cooler north-facing slope of the Bechtheimer Stein, by contrast, gives the wine a fine freshness. Because the grapes ripen slowly here, the unmistakable finesse and elegance of the Einzigacker can develop. Pinot Blanc demands careful tending to produce outstanding results in the vineyard. The foundation for that is the biodynamic viticulture Weingut Dreissigacker follows consistently. For the Dreissigacker Einzigacker the bunches are halved in early summer. This maximum yield reduction lets the grapes ripen beautifully without losing freshness. Another key element in growing Pinot Blanc is the careful management of the canopy. Leaves are removed only in part, so that the canopy is well ventilated while the grapes stay sufficiently protected from strong sun and rain.

From the best sites: Einzigacker Pinot Blanc
After the selective hand harvest the grapes are carried gently to the winery in small standard crates. On arrival they are cooled overnight before being trodden by foot the next day, in the traditional way. The berries then rest for several hours in their own juice and are pressed gently afterwards. At every step Weingut Dreissigacker places particular value on craftsmanship and careful handling of the fruit, the basis for the outstanding quality of the Dreissigacker wines.\r\nAfter settling, the must goes into 500-litre oak casks, where it ferments spontaneously. The wine then matures on the lees for at least 18 months. This time and the particular cask give the Einzigacker Pinot Blanc its unique traits. Its spicy toasted notes and powerful structure give it a striking personality. At the same time the fresh fruit preserves elegance, delicacy and a fine-drawn structure. This unusual combination gives the Einzigacker Pinot Blanc its unmistakable character and an enormous ageing potential that completes this exclusive wine. Elegant dishes that are not too heavy suit the Einzigacker Pinot Blanc particularly well. Crisp pork belly with a warm green asparagus salad underlines its finesse beautifully. As a vegetarian alternative, baked feta with a selection of vegetables also works with this wine.
