From the best Bechtheim sites: Dreissigacker Wunderwerk Pinot Noir
Dreissigacker wines stand for uncompromising quality, long maturation and unadulterated character, and the Wunderwerk Pinot Noir 2018 is no exception. The grapes come from organically farmed top sites in Bechtheim, whose limestone soils create ideal conditions for Pinot Noir. To raise quality, the bunches are halved in summer so that the full strength of the vine concentrates in fewer berries. The result is particularly aromatic, profound fruit that gives the wine density and structure. The hand harvest is selective, into small crates, so that the fruit reaches the winery intact. There the berries are carefully destemmed and handled gently, for a Pinot Noir with fine tannin structure and expressive elegance.

Dreissigacker Wunderwerk Pinot Noir – matured in barriques, shaped by time
The mash of the Wunderwerk Pinot Noir ferments spontaneously for around three weeks, with the cap punched down regularly. Juice and skins stay in continuous contact, which builds structure, depth and intense aromas. Once fermentation is complete the young wine is drawn off and the pomace pressed gently. After a first racking the wine goes into barriques, where it matures for three years on the full lees and develops its fine spice, structure and complexity. After this extended maturation comes a further racking, before the Pinot Noir is bottled unfiltered: a wine of balance, depth and character that reflects the nature of the vintage clearly. Finely spiced dishes underline the character of the Wunderwerk Pinot Noir 2018 particularly well. Ideal with it: filet mignon with a red wine reduction and fine green beans, where the roasted notes of the meat and the spice of the wine complement each other perfectly. As a vegetarian alternative we suggest an autumnal quiche with beetroot, goat's cheese and caramelised onions. The earthy depth of the beetroot and the fine acidity of the cheese harmonise beautifully with the structure and elegance of this Pinot Noir. Dishes that are refined and spiced at once go excellently with the powerful Wunderwerk Pinot Noir. We recommend a quickly seared filet mignon with a red wine reduction and fine green beans; the spice notes of the wine harmonise particularly well with it.\r\nAs a vegetarian pairing, an autumnal quiche with beetroot, goat's cheese and caramelised onions works beautifully.
